Flat Iron is set to bring its popular ‘Carcass Club’ to Leeds for the first time this October, offering meat lovers a unique dining experience. The event will take place on Wednesday, 16th October, and will be hosted by Flat Iron’s Head of Beef, Fred Smith. This special evening will spotlight Dexter beef, providing an exclusive opportunity to savour this lesser-known but exceptional breed.
The Carcass Club is a series of one-off events designed to showcase remarkable rare breed or lesser-known beef, and Leeds will have the chance to indulge in Dexter beef for one night only. The Dexter breed has a rich history dating back to the 1750s in Ireland, attributed to a Mr Dexter from County Tipperary. Due to their small size and slow growth rate, Dexters are not commonly found on farms today. However, when carefully reared, they yield fine-textured, deeply flavoured beef of exceptional quality.

For this special occasion, two Dexter carcasses have been sourced from local Yorkshire farms. One comes from Mount Grace Farm, where the animals were tended to by Charles Ashbridge, keeper of Flat Iron’s own herd. The other is from trusted supplier Pam Cockerill at Crosscliff Farm. Both farms are renowned for producing some of the finest Dexter beef that the Flat Iron team has ever tasted.
The Carcass Club event is priced at £20 per person, which includes a delicious Dexter steak, a generous portion of beef dripping chips, sauce, and a glass of wine. Guests will also enjoy Flat Iron’s signature popcorn and Tahitian vanilla ice cream. The event operates on a walk-in basis and is available on a first-come, first-served basis, so attendees are encouraged to arrive early and simply ask for the Carcass Club upon arrival.

Fred Smith said, “So far we’ve served some remarkable beef at the Carcass Club – White Park, Native Angus, Belted Galloway, Wagyu from our own herd – and Dexter absolutely deserves to join this list. Not only that, but it’s also wonderful to be able to showcase beef from two Yorkshire farms. Dexters never disappoint, and I am delighted to share this beef with our friends in Leeds.”
The Flat Iron Carcass Club will take place at Flat Iron Leeds on Wednesday, 16th October, starting at 6 PM. With a menu priced at £20 per guest and walk-ins only, this promises to be an evening of exceptional flavours and local produce.
