Much to the delight of local food fans, one of Leeds’ most beloved restaurants is making a long-awaited comeback. Fuji Hiro, the city’s original Japanese restaurant, is set to reopen at The Merrion Centre on Thursday 12th June, following its closure earlier this year.
First opened in 1997, Fuji Hiro built a loyal following over nearly three decades with its no-frills, flavour-first approach to authentic Japanese cooking. News of its closure in early 2025 sparked disappointment among customers who had made it a go-to for ramen, noodles, katsu and gyoza.
Now, thanks to fresh investment from Leeds-born entrepreneur James Douglas, the much-missed spot is being brought back to life. James, co-founder of Red’s True Barbecue, has taken on the lease and is working alongside members of the original kitchen team to revive the dishes and details that made Fuji Hiro a local institution.

“Fuji Hiro has held a special place in the hearts of Leeds locals for decades,” said James. “I’ve been a fan since it first opened its doors in 1997, so to now take the reins and help write its next chapter is a real honour. We’ve gone back to basics with a simplified menu built around the core dishes it’s known for, and we’ve brought back some of the original chefs to help recreate the same recipes, sauces, and curry blends.”

The restaurant will also benefit from an interior makeover. While the aim is to preserve its original charm, the updated space will include a more consistent design and better layout to accommodate more diners during busy periods.
James added, “Fuji Hiro was always a hidden gem, but places like this don’t survive without regulars. Most independents never get a second chance. If you love a spot, don’t just talk about it — go and eat there.”

Its return is testament to the loyalty of its customers and the strength of our food scene. We look forward to seeing it flourish once again.”
