Hotel Indigo Leeds and The Banksia Champion Local Food and Drink

As it prepares to open its doors this summer, Hotel Indigo Leeds is placing Yorkshire at the forefront of its approach to hospitality, with a strong focus on local suppliers and regional identity.

The hotel, which will include the new bar and restaurant The Banksia, is making local sourcing a core part of its offering. From drinks menus to breakfast coffee, Yorkshire producers feature prominently, reinforcing the hotel’s commitment to supporting the local economy and delivering an authentic experience for guests.

Simon Grace, General Manager at Hotel Indigo Leeds, said: “We are committed to responsible, community centred hospitality at Hotel Indigo Leeds, and feel it is incredibly important to collaborate with local suppliers for our offering in food and drink. Creating strong relationships and long-term partnerships with local businesses is extremely important to us, and these local collaborations allow us to enhance guest experience by making our visitors feel as though they are getting that truly authentic stay.

“As a fellow Yorkshireman, I know that local businesses in surrounding areas produce the highest quality products, and it’s a pleasure that we will serve these to guests from around the country.”

Local brewery Northern Monk has been selected as the lead beer partner, while the bar menu will include spirits from Leeds Gin, Slingsby Gin and Dutch Barn Orchard Vodka. Maude Coffee, a Yorkshire-based roaster, will be served in guest rooms and at breakfast.

The Banksia will also feature a menu built on fresh, locally sourced ingredients. All meat will be supplied by Sykes House Farm, located just 15 miles from the hotel.

Craig Rogan, Head Chef at The Banksia, commented: “We have access to so much local produce across Leeds and Yorkshire, and that has always been an important factor for me when I build my menus and supplier lists. Whilst our menu will be Eastern-Mediterranean inspired, diners at The Banksia can also expect ingredients coming from our doorstep.

“The drinks menu is no different, with some of the best local spirits and beers on the menu – from Northern Monk Brewery to Dutch Barn Orchard Vodka and Slingsby Gin.”

The hotel’s interiors will also reflect its Yorkshire roots, but it is its community-first mindset that the team believes will leave a lasting impression.

Hotel Indigo Leeds is part of the wider Indigo brand, known for bringing neighbourhood character into each of its locations. The Leeds hotel is expected to open later this summer.
