A new collaboration between Malton-based patissier Florian Poirot and Spirit of Yorkshire has produced a distinctly Yorkshire take on the classic French macaron.
Florian Poirot has created a macaron filled with a Filey Bay single malt whisky cream, combining the light texture of the traditional sweet with the smooth, creamy notes of the local whisky.
Mr Poirot said: “I first met Morgan from Spirit of Yorkshire three years ago at a tasting at McMillans, where he paired some Filey Bay whiskies with our chocolates. That led to conversations about a collaboration, and now we’re delighted to see it come to life in our classic macaron range. Pairing the smooth, creamy notes of Filey Bay with the lightness of our macarons felt completely natural. It’s been a joy to work with the team at Spirit of Yorkshire to create something unique for whisky and patisserie lovers alike.”

They are also served in the Pot Still Coffee Shop at Spirit of Yorkshire Distillery in Hunmanby.
