A fresh line-up of global street food vendors has officially taken over the vans at Trinity Kitchen, launching today (Monday 1st June 2026) for a limited eight-week summer residency.
The latest rotation brings five independent food brands into the heart of Trinity Leeds, offering everything from authentic Sri Lankan street eats to fluffy Asian bao buns. The incoming vendors will be serving up their specialist menus alongside permanent residents like Pho, Rola Wala, and the recently opened Jerk Junction until Sunday 26th July 2026.
The new line-up features:
- Ayubowan: Serving traditional Sri Lankan street food, including spicy deep-fried lentil and onion fritters (Parriphphu Vadai) and fiery Nasi Goreng rice dishes topped with garlic and fresh chillies.
- Rico: Specialising in Latin fusion dishes, notably golden fried empanadas stuffed with tender meats and melted cheese.
- Chicken Bandits: Cooking up classic, heatwave-ready Nashville hot fried chicken burgers, saucy chicken wings, and fully loaded fries.
- Fat Cat Bao: Rolling out soft, steamed Asian bao buns packed with chicken or crispy tofu, tangy sauces, and house-pickled onions.
- Masri: Making a welcome return to the venue with traditional Egyptian Koshary (a mix of pasta, vermicelli rice, and brown lentils in a garlicky tomato sauce), alongside ribeye kebabs and falafel burgers.
The summer street food rotation arrives just ahead of a massive transformation for Trinity Kitchen. Starting on 11th June, the food court will double as a giant, 1,000-capacity evening fan zone for the FIFA World Cup. The free-to-attend space will feature three super-sized 5m x 3m projection screens, a brand-new pop-up bar hosted by Leeds independent brewery Northern Monk, live DJs, and matchday brass bands, with table bookings now open for England fixtures.
