Cedar Court Hotel Harrogate is set to unveil its much-anticipated dining gem, Amber’s Restaurant, this April, promising to redefine the culinary landscape of the charming town. With an aim to create a vibrant dining destination for both locals and visitors, the exclusive sneak peeks of the interior design and menu inspiration have left food enthusiasts eagerly anticipating the grand opening.
Award-winning interior design practice Studio Two is orchestrating the transformation, drawing inspiration from the legacy of the pioneering scientist and socialite, Lady Amber Fitzwilliam, who once hosted her renowned salon at the hotel in the early 20th century. The design concept pays homage to Lady Amber’s groundbreaking research on coral and algae, incorporating patterns and textures reminiscent of her work. Soft tactile elements, earthy warm tones, and intricate design details will define the space, evoking Lady Amber’s meticulous note-taking, while grand yet delicate lighting will add depth and color to the scheme.
Collaborating closely with Cedar Court Group’s Executive Chef, Steve Collinson, Amber’s menu promises a modern twist on Yorkshire dining, featuring traditional British dishes with contemporary flair. Emphasising high-quality ingredients sourced from Yorkshire and beyond, the menu offers a tantalising array of options, including 28-day dry-aged Hereford breed Beef steaks from Sykes House Farm in Wetherby, Roasted Gressingham Duck breast, and indulgent Sunday lunches with all the trimmings. Vegetarian, vegan, and gluten-free options will also be available to cater to diverse palates.

“From receiving the call to work on this project, we were intrigued! Being local to Harrogate, we’re really excited to be creating a space in such an iconic venue for the town. We’ve been inspired by its history and using its ornate detailing from the past has been a tremendous opportunity for the designs. We’ve looked closely at how the restaurant will benefit the existing hotel and vice versa and we want to create an environment that feels homely and inviting for every guest.”

“Developing the food offering for the Amber’s restaurant has been a real journey of discovery around local suppliers as we are keen to create a range of classic and high-quality Yorkshire dishes with contemporary and stylish presentation that will fit perfectly with the new restaurant and private dining space. This is a great opportunity to bring the ideas of the team and the local inspiration together, my personal favourite will be seeing the restaurant serving a Sunday Lunch that we will enjoy providing and I know the local Harrogate residents and our guests will love.”
