A national restaurant group has unveiled its new seasonal menu rotation, drawing inspiration from an often-overlooked culinary milestone: the Mexican origins of the classic Caesar salad.
Tortilla has officially introduced its “Summer Edit” menu across its estate, headlining a new “Cali Caesar” range. While popular culture frequently associates the dish with Italian cuisine, the Caesar salad was originally invented by restaurateur Caesar Cardini in Tijuana, Mexico, in 1924. Given Tijuana’s position on the Mexico-California border, the location directly mirrors the California-style Mexican flavour profile that underpins the Tortilla brand.
The newly launched menu line-up introduces both a Cali Caesar Wrap and a Cali Caesar Salad. The recipes combine extra asado chicken, smoky chorizo, Monterey Jack cheese, crushed tortilla chips, fresh lettuce, and a squeeze of fresh lime. The ingredients are brought together by a proprietary Cali Caesar dressing, made fresh in-house daily for a creamy, tangy profile with a subtle smoky finish.
To accompany the food items, the brand has introduced a pink Hibiscus Lemonade, blending floral hibiscus notes with citrus lemon.

To support the roll-out, Tortilla is launching a street food truck marketing activation on Saturday 6th June 2026. The branded summer truck will pitch at Clapham Common in London from midday, handing out free Cali Caesar Wraps and Hibiscus Lemonades to the public while stocks last. Additionally, an exclusive digital promotion is running for the brand’s Burrito Society loyalty members until 9 June, offering a complimentary Hibiscus Lemonade with the purchase of any item from the new Cali Caesar food range.
